10-MINUTE CREAMY TOM YUM RAMEN
This Thai inspired ramen is so quick, so easy, and packed with bold, comforting flavors. Perfect for a rainy or cold day, it comes together literally under 10 minutes!
INGREDIENTS

3 to 4 teaspoons Tom Yum Paste (Highly recommend Mekhala or Maesri)
1 Can Coconut Milk (Highly recommend Thai Kitchen)
Ramen Noodles (Highly recommend Ocean's Halo)
Spicy Fried Onions — for garnish (Highly recommend MaeMai)
Spicy Furikake Seasoning — for garnish
Roasted Seaweed Strips — for garnish (Highly recommend Gimme in Teriyaki)
METHOD
Make the broth: In a saucepan, combine the coconut milk and 3 to 4 teaspoons of tom yum paste. Adjust the amount of paste based on your preference — add more if you want a stronger flavor. Heat the mixture gently, bringing it to a slight boil. Add a splash of water to achieve the perfect balance between brothy and creamy.
Cook the noodles: Boil the ramen noodles in a separate pot according to package instructions. Once they're done cooking, rinse the noodles with cold water to stop the cooking process and prevent them from become too soft.
Assemble: In a serving bowl, combine the noodles with the broth. Garnish generously with spicy fried onions, spicy furikake seasoning, and roasted seaweed strips.
